Spicy Chicken and Bacon stew

So, what to do with chicken and bacon in the refrigerator ??

Well, it was cold outside today, so I thought, “hey, what about a stew” !!

So, this is my Spicy Chicken and Bacon stew.

2/3 medium skinless chicken filets
3/4 rashers of smokey bacon (non-smoked will also be fine)
1 medium-size onion, chopped into 8 and then pulled apart
1 or 2 cloves of garlic (to taste), crushed/chopped
1 large red (or green/yello) capsicums, sliced into 1/2 inch (1.5cm) slices
1 teaspoon of dried mixed herbs (can be fresh herbs of your choice)
Pinch of salt
Pinch of white pepper
Pinch of dried chilly flakes, or 2 small, or 1 large fresh chillies
2 tablespoons light/olive oil
2pints (1 ltre) Stock, either chicken or vegetable – stock cubes will suffice

Place the oil, chillies (flakes or fresh), garlic and onion in the bottom of a big stew/stock pot and heat until onions are soft
Then, add chicken to the pot and cook until browned
Add capsicum
Add stock to pot, bring to the boil, and then simmer for 35 minutes

Serve with:
Boiled potatoes (can be placed in stew 25 minutes before the end of the cooking time)

Lovely on a cold winters evening.
